White Sugar
1 small
Red Onion Chopped finely
1 clove
Garlic Chopped
2 medium

To make Burgers:
1.) Saute the brown onion along with the minced garlic in a fry pan until just cooked. Allow to cool
2.) Add the cooked brown onion and garlic, minced beef, bread crumbs, egg, parsley, cheese, worcestershire sauce, ketchup into a large mixing bowl and combine till meat comes together but is not sticky. If its sticky add more bread crumbs but mixture should be moist.
3.) Shape the meat mixture into evenly sized burger patties. Wet your hands as you shape the meat to create the perfect shape.
4.) Place the meat burgers in a greased fry pan and cook on each side for 5-7 minutes or until cooked through. Allow to rest before serving to keep the juices in.
To make the Relish:
1.) Place the red onion, heirloom tomatoes, chopped garlic, sugar, bay leaves and vinegar into a large saucepan on medium heat.
2.) Bring to the boil and allow to simmer for 30-45 minutes or until thick. Season to taste. Feel free to add more sugar or vinegar depending on how sweet or tangy you prefer your relish.
3.) Allow to cool. The relish will keep in an airtight jar for up to a week.
Serve the burgers in a lettuce cup smothered in relish and topped with avocado. Enjoy!
