Chicken Stuffed Baked Potatoes

Baked potatoes can make a great quick and easy meal. They are extremely filling, family friendly and can be a main course or served on the side.

Ingredients for 4 serves:

4 medium baking potatoes
1 red pepper, diced
1 green pepper, diced
1 avocado
4 spring onions, diced
1 cup of mushrooms, sliced
1 cup of cheese
1 cup of sour cream
2 cups of shredded roast chicken
2 tbs garlic butter
2 tbs olive oil
salt and pepper


1.) Poke a few holes in the potato with a fork and boil for 15-20 minutes, skin on. Drain water, rub potatoes with oil, salt and pepper, wrap in foil and place in an oven on medium heat for 20-30 minutes.

2.) Meanwhile, chop your vegetables and saute mushrooms


3.) Once potatoes are cooked open with a fork and spread with garlic butter. (Hint: serve your baked potatoes in the foil to save time with washing up).


4.) Add the cheese, chicken, mushrooms, vegetables and top with sour cream and spring onions. Serve!
