Easy Banana Bread
Banana Bread is one of those humble snacks that go well at any time of day. It’s also a perfect excuse to use up some old, browning bananas.
I love this recipe too because it’s very flexible and versatile. Feel free to add walnuts, choc-chips, cocoa pieces, dried fruit or even grated carrot.
Here are the ingredients that I used:
Makes one 8 inch loaf pan
1/2 cup of grassfed butter, room temperature
1 tbs of raw sugar
2 eggs, organic
4 medium, overripe bananas
1/2 cup of almond flour
1/2 cup of whole wheat flour
1/3 cup desiccated coconut
1 tbs maple syrup
1/2 tsp cinnamon powder
1/4 tsp cardamon powder
1 tsp baking powder
2 tsp vanilla extract
1.) Take your butter and sugar and beat together until smooth. Add the eggs, mashed bananas and vanilla.
2.) Sift in the wheat flour and baking powder, add the almond flour, coconut, maple syrup and spices.
3.) Add the mix to your well-greased loaf tin and bake in the oven at 350F for one hour.
4.) Serve warm.
