Easy Gluten Free Shrimp Taco’s with Mango Salsa
Everybody loves a taco!
These taco’s are made with corn tortilla’s making them a perfect option for those who are gluten intolerant.
Perfect for a family-friendly summer’s night dinner or for entertaining!
Ingredients for 4 serves:
8 small soft corn tortillas
2 ripe mangoes, diced
2 avocados, diced
1 persian cucumber, diced
1 green pepper, diced
2 cloves of garlic, crushed
1 tomato, diced
1 lime, juiced
1/3 cup cilantro, chopped
1 pound of shrimp, peeled and deveined
1 tbsp chipotle or fajita seasoning
1 cup of Mexican cheese, shredded
1.) Combine the garlic, mango, tomato, green pepper, green onions, cucumber, cilantro, avocado and lime juice into a mixing bowl.
2.) Toss the shrimp with the seasoning and place in a pan with a little coconut or rice bran oil. Saute until cooked through.
3.) Heat the tortilla’s on a griddle or fry pan and top with salsa, cheese and shrimp. Enjoy!
