Easy Roast Chicken
Roast chicken makes a healthy and delicious meal but often the effort of preparing a whole bird can seem like too much work. This recipe uses chicken thighs making it super easy to prepare and deliciously flavorful.
Ingredients for 2 serves:
2 organic chicken thighs with drumsticks attached
2-3 red potatoes, skin on and cut into large cubes
3-4 carrots, cut into quarters
4-5 cloves of garlic, peeled
Fresh herbs: thyme, rosemary and sage
1 large brown onion, roughly diced
2 tbs olive oil or rice bran oil
1/2 tbs butter
2 tbs water
sea salt and pepper
1.) Place all the vegetables and some of the herbs into a heavy pan and coat generously with salt, pepper and oil. Add the two tablespoons of water and set aside.
2.) To prepare the chicken, wash under water and pat dry gently with a paper towel. Next, season the skin really well with lots of salt and pepper and a little oil.
3.) Turn the chicken fillets so they are skin side down and divide the butter and remaining herbs. Gently rub the butter into the meat, this way the chicken develops a really nice flavor and is nice and moist. (You can omit this step if you want to avoid butter.)
4.) Place the chicken on top of the vegetables and cover with foil. Place into a moderate oven for about 20-30 minutes. Remove the foil and bake some more for about 10 minutes or until the chicken has a golden hue and the juices run clear. If the vegetables dry out, add a little more water.
