Easy Summer Pasta

Hot summer nights are upon us and the last thing we want to do is slave over a hot stove. This pasta dish is so light and summery and as a bonus, its SO easy! In fact I am going to say this recipe is virtually fail-proof!

Serves 2-4

Ingredients:

1 large zucchini, grated
1 cup of heirloom cherry tomatoes, halved
2-3 cloves of garlic, finely chopped
2 cups of shrimp, tails on deveined
1/4 packet of Barilla angel hair pasta
Chives, to serve
Grated Parmesan cheese, to serve

Directions:
1.) Grate zucchini, chop garlic and tomatoes

2.) Saute Shrimp

3.) Boil Pasta

4.) Throw it all together in the saute pan

5.) Serve with chives and parmesan and there you have it!

See, I told you it was easy!
