Easy Vegetable Pizza
Thick yeasty pizza dough can leave you feeling like a blob. This yeast free pizza dough is super easy to make, thin and crispy. This pizza recipe is also full of veggies which makes it pretty nutritious. Enjoy!
For the Dough:
1 1/2 cups of Whole Wheat Self Raising Flour
40g of unsalted butter, softened
1/2 cup of organic milk (or enough to make a dough)
Italian Seasoning or your favourite spice mix (optional)
Pizza Toppings: (you can add whatever you fancy, here is what we did)
Pizza Sauce or Marinara Sauce (bottled is fine)
Broccoli, chopped into small florets
Feta, marinated and cubed
Mozzarella Cheese, grated
Parmesan Cheese, grated
Here’s what to do:
1.) Sift the flour into a mixing bowl and rub in the softened butter with your finger tips until the mixture looks like fine breadcrumbs. (Fun fact: This is called the rub-in-method.)
2.) Add any seasonings that you desire and then the milk until it forms a dough. You may need to add more or less milk. Lightly knead the dough with your hands but only lightly, if you overwork the dough it will become too dense.
3.) Roll out the dough or use your hands, and press it into a greased pizza dish. You can make it as thin as you want- in my opinion the thinner the better! Just remember that the dough will shrink back from the sides.
4.) Poke a few holes in the dough with a fork and place in an oven at 350F for about 10 minutes or until the crust is cooked but not golden. Remove from oven and add the toppings! Return to the oven and cook until crust is golden and cheese is bubbling.
5.) Top with fresh basil and avocado. Slice and serve!
