Gourmet Tempeh Salad
Tempeh is one of the richest sources of protein and B vitamins for vegetarians and vegans. While it may look a little gnarly, and sound a little gnarly- it is the product of fermented soy beans, when cooked right it is absolutely delicious.

Ingredients for two serves:
1 block of tempeh sliced thinly
2 cups of arugula
1 cup of steamed or roasted cauliflower
2 tbs sliced almonds
2 tbs pine nuts
1 avocado, sliced
1 tbs roasted garlic avocado oil (any good quality oil will do)
1 tbs good quality balsamic vinegar
1.) The trick to first time tempeh consumption is to slice it thinly. To prepare, simply pan fry the tempeh in rice bran or coconut oil till golden- around 1 min on each side.
2.) In a bowl mix together all the other ingredients including the oil and vinegar and then add the cooked tempeh.
3.) Season, toss and serve.
