Healthy Vegan Snack Bars

Looking for a sugar free, nutrient packed snack? Look no further than these yummy, healthy vegan snack bars.

Made with healthy coconut oil, agave and oats, these bars are high in fibre and will help to keep you full between meals.

Feel free to add your favorite nuts, seeds or fruit.


2 cups of rolled oats
1/2 cup shredded coconut
1/2 cup of chopped nuts and seeds (I used almonds, pecans and sunflower seeds)
1/2 cup dried fruit (I used blueberries and raisins)
2 tbs cacao nibs (or your favorite nutritional booster like flaxseeds, hemp seeds etc)
1/2 cup of coconut oil, melted
1/3 cup of raw agave syrup


1.) Preheat the oven to 350 F

2.) Toss the oats, coconut, nuts, seeds, fruit and cacao together in a large bowl.

3.) Stir together the melted coconut oil and agave

4.) Pour over oats. Mix together well.

5.) Place into a greased pan and bake for 15-20 minutes. The bars should be lightly golden.

6.) Cool and slice.

Will keep stored in an airtight container for up to a week. Make sure you grease the pan really well or the bars will stick to the bottom (believe me this happened.) A good suggestion for bars that wont come out of the pan is to smash them up into chunks and make your own granola!
