Hearty Vegetarian Lentil Shepherd’s Pie

Whether you are vegetarian or just trying to cut back on meat, this hearty Lentil Shepherd’s Pie is definitely the way to go.

Ingredients for 4 serves:

1 medium carrot, chopped
3 stalks of celery, chopped
2 cloves of garlic, finely chopped
1/2 brown onion, finely diced
1 tsp tomato paste
1 can of diced tomatoes with juice
1 can of cooked organic brown lentils
4-5 medium potatoes, cubed
1/2 cup of grated cheddar cheese
2 Pinches of dried italian seasoning


1.) Place the cubed potatoes into a pot of water and bring to the boil. Cook until the potatoes are very soft. Drain and mash, and set aside.

2.) Place the onions, garlic, carrot and celery into a deep pot and sweat until aromatic and soft. Add italian seasoning and tomato paste and continue cooking over medium heat.

3.) Add the drained and washed canned lentils and canned tomato with juice and cook on low heat for 20 minutes.

4.) Place the lentil mix into a casserole dish. Top with the mashed potato and cheese. Place in the oven for 20 minutes.

5.) Allow the pie to stand for 5-10 minutes before cutting a slice and serving. Enjoy!
