Kale Caesar Salad
Ceasar salad usually gets a bad wrap for being unhealthy due to the creamy dressing, croutons and cheese, but this kale version is not only healthier it’s also delicious and a great way to get some dark leafy greens into your diet.
For people who wish they could love kale, this is the recipe for you!
To serve 2-3:
1 bunch of kale (curly or french is fine)
1 tbs miso based ceaser salad dressing (or you can make your own)
2 tsp hemp seeds
2 tsp of parmesan cheese, grated (optional)
1 tbs sliced almonds
1.) Tear the kale leaves off from the stalks and using your finger tips, rip the kale leaves into small pieces. You want to lightly rub the leaves with your finger tips as you tear, this makes the kale nice and tender and easier to digest.
2.) Spoon in the cheese (if using), hemp seeds, almond slices and dressing. Toss together.
3.) Allow the salad to sit for about 30 -45 minutes before serving. This allows the flavors to set in and ensures that the kale is nice and tender.
