Mandarin Vanilla Cake
This delicious buttery cake goes perfectly with the sweet, tangy mandarins and is perfect for afternoon tea or a casual get together with friends.
200g Butter, soft at room temperature
200g castor sugar
6 small mandarins, peeled
2 cups Self-Raising Flour, sifted
3 tbsps Milk
1 tbsp Orange Juice
1 tsp Vanilla Bean Paste
3tsps White Sugar (for the mandarin mix)
1.) In a large mixing bowl whip together butter, sugar and vanilla until creamy.
2.) Add the eggs and beat slowly until combined. Add the orange juice and fold through.
3.) Add the flour gradually and fold into the mix using a spatula. Add the milk to form a creamy batter.
4.) In a saucepan add the mandarin segments, sugar and enough water just to cover them, bring to the boil and allow to cook for 15 minutes. Stir occasionally.
5.) Place the mandarin segments without the syrup in a well greased cake tin (about 20 inch in size). Reserve the syrup.
6.) Top with the cake mix and bake in a preheated oven at 390 degrees Fahrenheit for 15-20 minutes or until golden and cooked through. Once cooked, prick a few holes in the cake and pour the syrup on top.
7.) Allow to cake to cool and turn it out of the cake pan. Slice and serve with your favorite cup of tea.
