Orange Almond Pistachio Cake
You will not be disappointed with this cake! Its moist, tasty, not too sweet and goes perfectly as a snack, dessert or even for breakfast! It is also gluten free. A definite must try!
To makes one 8 inch round cake tin:
1 heaped cup of almond meal
1 cup of pistachios, ground (food processor works great)
2/3 cup of coconut
1/2 cup of fine white sugar
1 tsp vanilla extract
1/2 tsp almond extract
zest of one orange
1.) Grease your cake tin and preheat the oven to 356 F
2.) Melt the butter in a saucepan and allow to cool slightly.
3.) In a bowl, gently whisk together the almond meal, pistachio meal, coconut and sugar
4.) Combine the butter and egg mix to the dry ingredients and fold together.
5.) Pour the batter into your cake tin, sprinkle with flaked almonds if desired.
6.) Bake for 45 min or until cake is cooked all the way through.
