Prawn Rice Pilaf
A hearty rice dish with gems of dried fruit and delectable king prawns will leave you coming back for more! The brown rice makes it super healthy and full of fiber and it is so easy and simple to make. Perfect for the whole family or for entertaining guests.
Ingredients for 4-5 serves:
2 cups Brown Basmati Rice
2 cups Vegetable Stock Or Chicken Stock
2 cups Red Onion, Diced
1 small Garlic, chopped
3 cloves of garlic, crushed
4 strands, Saffron
1 cup of Broccoli florets
3 tbsps currants
2 tbsps dried cranberries
1 pound King Prawns, Peeled and Deveined
1.) Place the onion, garlic into a deep pan with a little oil and saute until just cooked. Add the lemon juice and rind, stock, 2 cups of water and saffron and bring to the boil. (You may need to adjust the amount of water depending on the type of rice you have.)
2.) Once boiling add the rice and simmer until just cooked- about 15 to 20 minutes.
3.) When the rice is nearly done, add the broccoli and currants and allow to simmer for another 10 minutes or until the rice is fluffy and cooked through.
4.) Meanwhile saute the prawns in a little coconut or rice bran oil on medium heat. Feel free to add cayenne pepper or your favorite seasoning.
5.) Once the rice is cooked through, add the cranberries and some chopped fresh parsley. Top with the prawns and serve.
