I love eating crab cakes at restaurants but have always thought they were too tedious to make at home- not this recipe! I promise these will be the easiest, most delicious crab cakes you have ever tasted and they look great too! For this recipe to be a winner use good quality crab meat, I promise you wont be disappointed!

8 ounces of fresh cooked crab meat
1 red pepper, diced finely
3-4 green onions, diced finely
2 cloves of garlic, crushed
1 tsp of lemon or lime zest
3 sprigs of dill, finely chopped
3 tbs plain greek yoghurt
1 tbs of dijon mustard
2 cups of panko breadcrumbs

1.) Finely shred the crab meat using a fork and add the peppers, garlic, onions and herbs into a mixing bowl.

2.) Then add the yoghurt and mustard and combine. The mixture should be wet but dry enough to form into patties.

3.) Shape the patties into rounds and coat lightly in panko.

4.) Using rice bran or coconut oil, lightly fry each cake for about 3-4 minutes on each side or until golden and cooked through.

5.) Serve with aioli or thousand island sauce, microgreens or your favorite salad. Enjoy!
