Need some new healthy lunch inspirations? Why not try this delicious and healthy Smoked Salmon Panini.

It’s easy to make and great to take to work or school.

Wild caught salmon is full of protein, omega-3 fatty acids and calcium. While smoked salmon is not as nutritious as fresh salmon, it’s easier to prepare in sandwiches and makes a good alternative to ham and other processed meats.

Using wholewheat or sprouted grain organic bread is also a healthier option than a regular white panini roll. You can also use a wholewheat wrap if you are trying to keep it carb light.


2 slices of wholewheat or sprouted grain bread
1/2 tbs of homemade basil pesto
1/2 tbs of cream cheese, organic
1/4 avocado
1-2 slices of wild caught smoked salmon
1/2 cup of baby spinach and kale leaves

1.) Assemble your sandwich by spreading the cream cheese and pesto into the corners of the bread.

2.) Add the smoked salmon and spinach and kale leaves.

3.) Press under the panini maker until golden. Open up the panini and add the avocado (you can add it earlier if you don’t mind warm avocado)

4.) Slice into halves and serve
