Smoked Salmon Pizza
I found these really great sprouted grain pizza bases made from quinoa, buckwheat and wheat berries so I decided to make a “gourmet” style Smoked Salmon Pizza.
I served this dish for lunch with some friends and it was a real hit. Its light, summery and easy to make, and looks really impressive too.
You can use whatever pizza base you can find but these toppings would really be better on a thinner crust base.
Makes 1 pizza
1 pizza base
100g of organic cream cheese
1 green (spring) onion
1 tbs chopped dill tips
1 tbs flat leaf parsley chopped
1 tbs chives, finely chopped
4-5 slices of smoked wild salmon
8-10 mini mozzarella balls, cut in half
1 cup of arugula or rocket leaves
1.) Place your pizza into the oven to pre-cook it. Basically you want the dough to be about 5 minutes away from being cooked all the way through because these toppings cannot be in the oven for too long.
2.) In a bowl, add all the herbs and green onions to the cream cheese and mix till well combined.
3.) Spread over the warm pizza base- this will help the cream cheese to melt over the base
4.) Top with arugula, smoked salmon and the mozzarella
5.) Place into a 350F oven for about 5 minutes.
6.) Serve
