Spiced Pound Cake With Chai Tea Plums
This delicious, lightly spiced pound cake is light and airy and pairs perfectly with the sweet chai-infused plums. Perfect with a cup of tea or coffee.
Ingredients:
Pound Cake
1 1/2 sticks (3/4 cup) butter, softened
2 cups all purpose flour
1 1/4 tsp baking powder
1 tsp ground cardamom
1 tsp vanilla extract
1/2 tsp almond extract
1/4 cup whole milk
1 cup of sugar
3 eggs, room temperature
1/2 cup mascarpone
Plums
1 pound of plums (about 4)
3 chai tea bags or 3tbs loose leaf tea
3/4 cup of sugar
Directions:
1.) Beat the butter and sugar together until light and creamy. Beat for about 5-7 minutes for a really fluffy cake. 
2.) Beat in the eggs one at a time until mixture is super creamy. Add the vanilla and almond essences.
3.) Sift together the flour and baking powder and add the cardamon in a separate bowl. Add to the egg mix in small additions alternating between the mascarpone and milk until all ingredients are combined.
4.) Add the batter to a greased loaf pan and cook for 55-60 minutes at 350 F. You may need to cover the top with foil if you find the top is getting too brown.
5.) While cake is cooking score the plums and make 2 cups of tea as usual. Add sugar to the tea and bring to the boil. Add the plums and allow them to cook for about 15 minutes until soft.
6.) Cool the plums, remove seed and chop roughly. Pour over pound cake once cooked. Serve.
