Spicy Prawn Stir Fry
These prawns are delicious, meaty and nicely spiced. Served with the vegetables this dish is full of bold flavor and color.
1 pound of large wild caught prawns
1 red onion, diced
3 sweet red peppers, chopped
2 bunches of bok choy
1/4 stalk fresh ginger root
1 tbs fresh ginger, chopped or grated
1/2 tsp tumeric
1/2 tsp chili powder
1 tbs fresh cilantro, chopped
1 tbs rice bran or coconut oil
salt and pepper
1.) Wash, peel and devein the prawns. Coat them in a little oil and the chilli powder, cilantro, tumeric, salt and pepper. Leave to marinate in the fridge for 20-30 min.
2.) Heat the oil in a wok and add the onions, ginger root and ginger and saute together till onion becomes transparent.
3.) Add the red peppers and bok choy, then turn down the heat to keep a light crunch to the vegetables.
4.) Using a little more oil, saute the prawns until they become golden.
5.) Serve on top of the vegetables with a wedge of lime.
