Strawberry, Apple and Rhubarb Coconut Cobbler
This cobbler contains so many fresh ingredients however the rhubarb is the main star of the dish. The tangy, tart sweetness from the rhubarb is amazing and if you have never tried it, you are missing out! Rhubarb pairs fantastically with apples and all kinds of berries.
The strawberry, apple and rhubarb coconut filling is not overly sweet, has a fresh taste and just a hint of tartness. The coconut crumb topping is light and gives a nice balance to the fruit.
Easy to make, delicious, healthy, what more could you ask for!
Serves 6
Ingredients
Fruit filling:
3 cups of fresh fruit (rhubarb, apple and strawberries)
1 tbs sugar
1 tbs water
zest of half a lemon
Cobbler Top:
2 tbs butter, softened
1 1/2 tbs all purpose whole wheat flour
1 tbs sugar
1/2 cup of coconut
1/4 cup walnuts, roughly chopped
Directions:
1.) Chop all your fruit (including the rhubarb) into even sized pieces. Yum!
2.) Place into a pot with the water, lemon zest and sugar. Stir to coat and allow to simmer until soft.
3.) Meanwhile, make the crumb topping by chopping up the butter and rubbing it into the flour with your finger tips. Rub together till the butter forms a bit larger than pea sized pieces. Add the sugar, coconut and walnuts, stir together and set aside.
4.) Take the fruit mix and place into a baking dish. Top with the crumb topping and bake for 15-20 minutes at 350 F.
5.) Serve!
