Summer Seafood Dinner Menu for Four

Hosting an intimate dinner party? Here is a great menu suggestion that you can tailor to fit your needs and your guests dietary requirements. 

All the foods have been paired together with both taste and texture in mind to ensure that your courses compliment each other and your guests leave feeling satisfied.

Appetizer:

Quick and Easy Crab cakes

Not only are they “quick and easy” but they also taste delicious. You can make these the night before and leave them in the fridge, you can then heat them up in the oven on a low heat for around 20-25 minutes. Alternatively, you can keep the uncooked crab cakes in the fridge for up to two days properly covered and then fry them up just before your guests arrive.

To serve: pile two on a plate and top with micro greens. Serve with a wedge of lemon.

Main Course:

Summer Pasta with Shrimp

Another “easy” dish, this pasta is light, lemony and is served with zucchini and shrimp.

Pasta isn easy dish to prepare if you are a first time cook, or wanting to prepare something simple. You can have all the veggies for the pasta chopped before the guests arrive.

The shrimp will take just a few minutes to cook so you can leave it to the last minute. Alternatively you can cook them till just done and then reheat them in the sauce once the pasta is cooked.

Sprinkle on top some good quality parmesan cheese and garnish with parsley for an elegant and easy dish.

Dessert: 

Mango Upside Down Cake

This fruity cake pairs excellently with the seafood and provides a nice finish to the meal. Serve with some fresh whipped cream and a sprig of baby mint for a real impact.

The cake should be made the same day you serve it to ensure the fruit stays nice and fresh. This cake does not however have to be served warm, so feel free to make it in the morning. Once the cake cools slightly, wrap it in plastic or cover it to keep it fresh.
