Vegetarian Chickpea Curry (Chana Masala)
Being part Indian I always appreciate the rich aroma and depth of flavor of indian dishes. This vegetarian curry-like recipe is not only delicious but so easy to prepare. It doesn’t matter if you are an Indian food lover, or a spice-rookie this recipe is definitely worth a shot!
2 cans of organic chickpeas (garbanzo beans) drained and rinsed
1 organic tomato, diced
1 large can of diced tomato in juice
2 tsp of garam masala
1 tsp of turmeric powder
2 tsps of ginger, grated
2 cloves of garlic, chopped
1/2 bunch of cilantro, chopped
1 medium onion, chopped
1-2 chillies, finely chopped with seeds removed
1.) Saute the onion in a little oil and add the garam masala, turmeric, ginger, chilli and garlic. Saute on low till the spices release their aroma.
2.) Once the spices have begin to caramelize, add the diced tomato, canned tomato and a small handful (but not all) of the cilantro.
3.) Once that is all simmering nicely, add the chickpeas.
4.) Cook the curry till the mixture becomes thick and the juices soak through the chickpeas. Add the remaining cilantro.
5.) Spoon a heapful into a bowl and serve with yogurt mint sauce and flat bread or rice. Enjoy!
