Warm Mozzarella & Peach Salad
I love fruits in salads. They just bring a light, sweet freshness to the vegetables and help enhance the salad both aesthetically and nutritionally.
Try this delicious, summery peach and mozzarella salad. The peaches are quickly marinated making them so juicy and the mozzarella is gently heated bringing out the rich and salty flavor. You won’t be disappointed!
2 medium peaches, sliced
8 ounces of fresh mozzarella, marinated works best
4 cups of mixed baby greens
2 tsp of finely chopped mint or basil
2 cap fulls of apple cider vinegar
1.5 tbs of olive oil
3 tsp of balsamic vinegar
1.) Place the peaches and mint into the salad bowl and toss through the apple cider vinegar. Set aside to allow the peaches to soak up the flavor.
2.) Meanwhile, slice the fresh mozzarella into rounds and place on a fry pan on very gentle heat. Turn the pieces over when they start to lightly melt. Do not over cook these. The mozzarella should still be able to hold it’s shape.
3.) Add the greens to the peaches and toss through with the olive oil and balsamic vinegar.
4.) Add the warm mozzarella on top and serve. Enjoy!
