Warm your Heart with Chicken Soup

Chicken Soup is soul food, and rightly so. Its packed full of nutrients and healing properties and is an excellent cure for coughs, colds and infections. This is a really simple Chicken Soup that has all the healing benefits and is quick and easy to prepare.

2 medium
 Chicken Thighs, Skin On Organic Preferred
2 medium 
Chicken Drumsticks, Skin on Organic Preferred
1 medium Brown onion, diced

2 medium Carrots, sliced

3 medium Celery stalks, chopped
2 medium Red Potatoes, diced
100lbs or 1/6 packet Angel hair pasta, broken
3 cloves of garlic, crushed
2 tsp ginger, grated
1 bouquet garni or any poultry friendly herbs tied with string
4 cups of water


1.) Place the chicken, skin on in a large soup pot. Add the bouquet garni and cover with water. Bring to the boil and skim off the froth as you see it.

2.) Add the vegetables and continue to cook on a gentle simmer for about 20 minutes or until chicken is tender.

3.) Remove soup from the heat and take out chicken. You can also skim off some of the fat if you desire. (The easiest way to do this is  allow the soup to sit and cool slightly so the fat globules to rise to the top.)

4.) Finely shred the chicken (remove skin) and add back to the pot along with the angel hair pasta. Discard bouquet garni.

4.) Continue to cook until the pasta is al dente.

5.) Season with the salt and pepper and serve.
